Ingredients

  • 450 grams of semolina
  • 115 gram of Raisins
  • 950 ml honey
  • 115 gram of flour
  • 150 grams of cashew Nuts
  • 300 grams of scraped coconut
  • 55 grams of Astra
  • 115 grams of sugar
  • 10 ml vanilla essence
  • 5 ml rose water
  • 2 cardamom pods
  • 2 cinnamon sticks
  • Rind of lime

Instructions

  1. Over a slow flame, pour in the honey on to a pan and add in sugar. After the sugar has dissolved, add in scraped coconut and mix until cooked. This would be your base for your Bibikkan.
  2. Add your preferred fruits into the base mixture and mix them until evenly distributed. Set in aside and cool the mixture over night.
  3. On the next day, add Astra, semolina and flour into the mixture. Combine the mixture until there are no visible lumps. Next, add vanilla, rose water, cinnamon, rind of lemons and cardamom and combine the mixture again.
  4. Spread Astra evenly onto a baking tray and pour in the Bibikkan mixture. Flatten the mixture on the baking tray and place cashew nuts on the mixture wherever you please.
  5. Finally, bake under moderate heat for 30 minutes and be welcomed to the most delicious of Sri Lankan delicacies.
