Astra Kokis

Kokis are one of Sri Lanka's most popular traditional sweets. Served especially during the Avurudu festival, they are prepared with rice flour and coconut milk and are deep-fried using a decorative flower-shaped mold.

  • rice flour 300 grams
  • thick coconut milk 3 cups
  • sugar 1 tablespoons
  • salt
  • egg 1
  • oil 450 millilitres
  • ground turmeric pinch
  • Astra 200 grams

  1. Except the coconut milk mix all other ingredients and 50g of Astra in a large bowl and make a batter adding coconut milk bit by bit. Make sure it’s not too thick or too thin. (ideally should be like a pancake batter). Heat oil with the remaining 150g of Astra in a pan. First dip the kokis mold into the heated oil for a few seconds then dip in the batter and start frying them. Make sure not to cover the top surface of the mold in batter. Once done remove with the help of a long stick.
