Ingredients

  • 1/4 tsp (7g) Astra
  • 1.5 (118 g) all-purpose flour
  • 2 tbsps finely chopped walnuts
  • 2 tbsps baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup (332g) brown sugar
  • 1 cup (237ml) milk
  • 1.5 cup (355g) grated carrots
  • 1 tsp vanilla extract

Instructions

  1. IN A LARGE BOWL, COMBINE ALL DRY INGREDIENTS EXCEPT THE GRATED CARROTS AND THE BROWN SUGAR. SET ASIDE.
  2. USING A CHEESE CLOTH, PAT - DRY THE GRATED CARROTS UNTIL ITS JUICES ARE ABSORBED.SET ASIDE.
  3. IN ANOTHER BOWL, COMBINE ALL WET INGREDIENTS TOGETHER WITH THE BROWN SUGAR AND THE GRATED CARROTS.
  4. ADD THE DRY INGREDIENTS TO THE WET INGREDIENTS AND MIX JUST UNTIL THE MIXTURE IS MOISTENED. DO NOT OVERMIX. (THE MIXTURE IS MEANT TO BE LUMPY)
  5. HEAT A FRYING PAN WITH MEDIUM HEAT. ADD 1/4 TEASPOON OF ASTRA. ONCE MELTED, POUR BATTER BY 1/4 CUPFULS. TURN WHEN BUBBLES FORM ON TOP OF THE PANCAKE; COOK UNTIL THE SECOND SIDE IS GOLDEN BROWN.
  6. TRANSFER TO A PLATE AND SERVE.
