Ingredients

  • 2 tbsp Astra Cooking Pack
  • 2 or 3 onions thinly sliced
  • 2 tsps salt
  • 2 cups basmati rice
  • 3 g saffron
  • 10 to 15 cardamom pods
  • 10 to 15 whole cloves
  • 6 pieces flat cinnamon
  • 2 tsps coriander seeds
  • 1 tsp black peppercorns
  • 1 tbsp chilli powder
  • 1/2 tsp ground turmeric
  • 1 cup yoghurt
  • 1 kg chicken
  • 4 potatoes (Peeled and Cut)
  • 4 bay leaves (Optional)
  • 4 tomatoes (quartered lengthwise)
  • 3 boiled eggs
  • A few coriander leaves

Instructions

  1. Melt 2 tbsps of Astra Cooking Pack over medium heat in a large vessel. Add the onions and a pinch of salt, cook until very lightly brown. Keep stirring occasionally, until the onions and deeply caramelized.
  2. In a large bowl, transfer all the rice and let it soak in cold water for 30 minutes.
  3. Add saffron in a bowl and half a cup of water to let it soak.
  4. Grind well 10 cardamom pods, 10 cloves, 3 pieces of cinnamon, coriander and peppercorns into powder.
  5. Add 1 1/2 tsps salt, chilli powder, turmeric and 1/2 cup yoghurt to the same mixture and stir well.
  6. Mix the chicken well with yoghurt and let it marinate for 20 minutes. Then add some potato pieces and let them marinate for 20 minutes.
  7. Heat 1/4 cup Astra Cooking Pack over medium flame and add 5 cardamom pods, 5 cloves, the bay leaves and cook for 2 minutes.
  8. Add the marinated chicken into the Astra and let it heat for 2 minutes in a large pot. Add the potatoes, tomatoes and half of the caramelized onions. Cook and stir for about 20 minutes, until soft.
  9. Drain the rice soaked in cold water and mix with yoghurt. Now add it to the same pot in which the chicken is cooking.
  10. Once mixed well, add Saffron directly from the vessel in which it was cooked. Then add 1/2 tsp salt and just enough water to submerge the rice and potatoes. Turn the gas to a medium flame.
  11. As soon as the rice is cooked and potatoes have become tender, remove the pot from the heat. Dish it out and garnish it with the remaining caramelized onions and boiled eggs on top and serve.
