What’s a rice and curry dish without Sri Lanka’s most favourite dhal curry. Sri Lanka is known for its love for rice and curry anytime of the day. Most people wouldn’t even mind eating it every day. Here’s how you make this Sri Lankan staple with the best taste ever.

  • 1 cup of dhal
  • 1.5 cups of water
  • 3/4 tsp of tumeric
  • 2 tsp of salt
  • 3 tsp of Astra
  • 1 tsp cumin seeds
  • 5 cloves of garlic thinly sliced
  • 1 green chilli chopped
  • 1 tsp of ginger paste
  • 10 curry leaves picked
  • 1 tomato diced
  • 1/2 tsp of chilli powder
  • 1/4 tsp of curry powder
  • 2 dried chillies
  • 1 tsp of lemon juice
  • corriander for garnishing

Instructions

Method
  1. Boil 1 Cup of Dhal with ½ Tsp. of Turmeric and 1 Tsp. of Salt in 1 ½ Cups of Water using a pot or a pressure cooker.
  2. Transfer the boiled dhal to a bowl and add 1 Tbsp. of Astra. Whisk it until it reaches a smooth consistency. Add water as needed.
  3. Heat 2 Tbsp. of Astra in a pan and fry 1 Tsp. of Cumin, 5 Cloves of thinly sliced Garlic, 1 chopped Green Chili, 1 Tsp. of Ginger Paste, 10 Curry Leaves, 1 diced Tomato. To this add 1 Tsp. of Turmeric, 1/4 Tsp. of Chili Powder, 1/4 Tsp. of Curry Powder and mix. Lastly, add 2 Dried Red Chilies and temper all the spices.
  4. Set aside a little tempered spice mix for garnishing.
  5. Add the previously prepared dhal to the pan. Then add 1 Tbsp. of Lemon Juice, 1 Tsp. of Salt, Coriander Leaves and stir everything together.
  6. Top with the remainder of the tempered spice mix and let it simmer.
