Rainbow Kokis

"Kokis” is a mandatory food in the Sinhala new year table. “Kokis” is a food that everyone likes despite their age. Especially when it comes to kids, kids love eating kokis and even though you make kokis prior to the new year, it’s hard to keep the kids away from kokis as they eat kokis to satisfy their snack cravings. Ingredients

  • 300 g rice flour
  • 3 cups coconut milk
  • 1 tsp sugar
  • salt to taste
  • 1 egg (if needed)
  • 450 ml oil
  • 200 g Astra
  • turmeric powder (A small amount)
  • food colouring (as per your choice)

Instructions

  1. Except coconut milk, mix all the other ingredients and 50g of Astra in a bowl. Make the "kokis" mixture by adding coconut milk little by little. Make sure to get the right consistency (similar to a pancake mixture).
  2. Heat the remaining 150g Astra with oil in a pan.
  3. Now take the "kokis" mixture in to different bowls and add your preferred colouring to each mixture.
  4. Heat the "Kokis" mould in the oil and Astra mixture. Then dip the mould in the different "kokis" mixtures and fry them in the oil. (Make sure to not dip the mould too deep in the "kokis" mixtures so that the mixtures do not touch the top part of the mould)
  5. Use a long stick to remove the "Rainbow Kokis" from the mould
