Ingredients

  • 2 cups rice
  • 100 g carrots
  • 100 g cauliflower
  • 1 potato
  • 2 onions
  • 2 tomatoes
  • 3 fresh green chillies
  • 1 red bell pepper
  • 1/4 cups green peas
  • A small amount of coriander leaves
  • A small amount of mint leaves
  • 3 tsps curd
  • 1 tsp garlic-ginger paste
  • 1 tsp ground coriander seeds
  • 1 tsp ground cumin seeds
  • A piece of cinnamon stick
  • 3 cardomon pods
  • 3 cloves
  • 2 tbsps Astra
  • 1 tsp rose essence
  • A small amount of turmeric
  • 1 tsp chilli powder
  • pandan leaves
  • curry leaves
For Dressing
  • cashew
  • fried onions
  • raisins

Instructions

  1. Place a pan on heat and add 3 tbsps Astra. Add pandan leaves, curry leaves, ground cardamom and cloves, cinnamon, cut onions and garlic-ginger paste.
  2. When the onions are tempering, add diced potatoes, green chilis and tomatoes. Reduce the heat and add ground coriander and cumin seed, salt, turmeric powder and chili powder. Mix and cook well.
  3. Then add curd and mix again. Then add carrots, cauliflower, coriander and mint leaves. Turn off the pan.
  4. Add that mixture and salt to rice. Add adequate amount of water, rose essence and cook the rice.
  5. After cooking the rice, add green peas, red bell pepper. Add cashew, fried onions and raisins for decoration.
