Veggie and Mayo Sandwich

One of the most challenging things when it comes to preparing meals for the kids is how to make simple and according to tiffin box guidelines given by schools and at the same time to make it a tasteful meal. Veggie cheese sandwich, the 3rd recipe of the Triffin box series. A tasty sandwich for the small ones' school meal. Not only tasteful this has great nutritional benefits. As this is made using Astra Mayonnaise it also contains the goodness of Omega 3 & 6.

Ingredients

  • 8 slices of wholegrain bread
  • 50 g carrot (grated)
  • 50 g cabbage (finely chopped)
  • 4 salad leaves
  • 2 tbsps Astra
  • 1 tbsp mustard paste
  • 3 tbsps Astra mayonnaise
  • 1/2 onions
  • 1 fresh green chilli or bell pepper
  • Salt and pepper

Instructions

  1. Put the grated carrots and finely cut cabbage in a bowl.
  2. Finely cut the salad leaves and add them to the bowl. Cut the green chilli pod or bell pepper and add it as well. Add Astra Mayonnaise, finely cut onions, salt and pepper. Mix well.
  3. Toast the bread slices.
  4. Mix mustard cream and Astra. Apply on 4 slices of bread.
  5. Add the vegetable mixture to those slices. Place the salad leaves on top.
  6. Place the other 4 bread slices on top of them, cut diagonally if preferred and serve.
