Ingredients

  • 2 large ripe bananas
  • 300 g all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • 110 g sugar
  • 5 tbsps Astra
  • 2 eggs
  • 125 ml buttermilk
  • 1 tsp vanilla essence
  • 25 g peanut butter

Instructions

  1. PRE-HEAT THE OVEN TO 190°C. LINE A 12-HOLE MUFFIN TIN WITH MUFFIN LINERS.
  2. SIFT TOGETHER FLOUR, BAKING POWDER, BAKING SODA AND SUGAR WITH A PINCH OF SALT.
  3. IN A SEPARATE BOWL, MASH THE BANANAS AND LET SIT FOR 10 MINUTES.
  4. MEANWHILE, MIX THE MELTED ASTRA, VANILLA EXTRACT, EGGS AND BUTTER MILK IN ANOTHER BOWL AND THEN MIX IN THE MASHED BANANAS.
  5. MIX THE WET AND THE DRY INGREDIENTS. ROUGHLY MIX IN WITH A FORK, BEING CAREFUL NOT TO OVER-MIX.
  6. BAKE FOR 20 - 25 MINUTES, UNTIL GOLDEN BROWN. COOL THE MUFFINS ON A WIRE RACK AND SERVE.
