Ingredients
120 g all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon powder
1/4 tsp ginger powder
115 g Astra
100 g granulated sugar
50 g brown sugar
2 large eggs
1/2 tsp vanilla essence
160 g carrots (shredded)

Instructions
PREHEAT THE OVEN TO 180°C. GREASE AND FLOUR A SQUARE CAKE PAN (OR LINE WITH PARCHMENT PAPER). SET ASIDE.
IN A LARGE MIXING BOWL, WHISK TOGETHER FLOUR, BAKING POWDER, BAKING SODA, CINNAMON AND GINGER.
IN A LARGE BOWL, BEAT ASTRA USING A WOODEN SPOON. ADD GRANULATED AND BROWN SUGAR AND BEAT AGAIN. ADD IN THE EGGS AND VANILLA ESSENCE AND MIX WELL.
ADD THE DRY INGREDIENTS TO THE WET INGREDIENTS AND STIR WITH A WOODEN SPOON
ADD THE CARROTS AND STIR IN.
POUR THE BATTER INTO A PREPARED PAN AND TAP IT AGAINST THE COUNTER TO RELEASE AIR BUBBLES.
BAKE FOR 25-30 MINUTES, OR UNTIL A TOOTHPICK INSERTED IN TO THE CENTER COMES OUT CLEAN.
COOL BEFORE SERVING.
