Ingredients

  • Astra 1 cup softened
  • packed brown sugar 1/4 cup
  • ground cinnamon 1/2 tsp
  • all-purpose flour 1 cup
  • finely chopped almond or cashew nuts 1/4 cup
  • Quick cooking oats 1/4 cup
Filling
  • 2 packages (250 g each) cream cheese softened
  • sweetened condensed milk 396 g
  • thawed apple juice concentrate 1/2 cup
  • large eggs 3 lightly beaten
Topping
  • Astra 1 tbsp
  • medium tart apples peeled and sliced 2
  • cornstarch 1 tsp
  • Ground cinnamon 1/4 tsp
  • thawed apple juice concentrate 1/4 cup

Instructions

  1. Preheat the oven to 325 degrees F
  2. In a bowl, beat Astra, brown sugar and cinnamon until blended
  3. Beat in flour, oats and almond/cashew nuts until well-blended. Press on to the bottom and 1-1 1/2 half inches up sides of a greased 9-inch spring-form pan
  4. Place on a baking sheet. Bake for 10 minutes. Cool on a wire rack.
  5. In a large bowl, beat cream cheese, until fluffy. Gradually beat in milk and juice concentrate until it becomes smooth.
  6. Add eggs, beat at low speed, just until blended (The mixture will be thin). Pour into the crust. Return the pan to the baking sheet
  7. Bake until the centre is almost set (40-45 minutes). Cool on a wire rack for 10 minutes. Loosen the sides from the pan with a knife. Cool for 1 hour or longer. Refrigerate overnight, covering when completely cold.
  8. To serve, in a large skillet, melt Astra over medium heat. Sauté apples until crisp-tender for 5 minutes. Cool slightly.
  9. For the glaze, in a small saucepan, mix cornstarch, cinnamon and juice concentrate until smooth. Bring to a boil. Reduce heat, cook and stir until thickened, for about 1 minute. Add 1 tbsp of glaze to sautéed apples. Toss to coat.
  10. Remove rim from spring-form pan. Top Cheesecake with Apples. Drizzle with glaze.
