Ingredients

  • 2 cups rice
  • 1 yellow onion
  • 1 small piece of ginger (chopped)
  • 9 garlic cloves
  • 950 ml coconut milk
  • 3 g saffron
  • 2 tbsps Astra Cooking Pack
  • 10 cloves
  • 10 curry leaves
  • 10 green cardamom pods
  • 1/2 tsp whole cumin seeds
  • 2 tsps salt
  • 1/2 tsp ground turmeric

Instructions

  1. Properly rinse and dry Basmati rice. Then allow it to dry completely.
  2. Pour 4 cups of coconut milk into a large bowl, add half the amount of water to it and mix it well.
  3. Add saffron to the mixture and give it some time to dissolve.
  4. Chop one medium yellow onion, some ginger and all the garlic cloves.
  5. Add some Astra Cooking Pack in a large pan. Once hot, add onions. As the onions start to cook a bit, add garlic, ginger and other spices.
  6. Add whole green cardamom pods, but before doing so, cut them open into two parts. This will allow its fragrance to spread and seeds to permeate the dish.
  7. Put ground turmeric and see your mixture turn perfectly yellow.
  8. Add curry leaves and cook for 10 minutes.
  9. When the spices are cooked well, add the completely dried Basmati rice and give it a thorough mix.
  10. Then pour the coconut water mixture along with the saffron. Close the lid. Leave it to come to a boil.
  11. Reduce the heat to medium flame after some time and stir occasionally.
  12. Let it cook at medium flame until the rice becomes fluffy and all the spices settle.
  13. Your yellow rice is now ready. Don't forget to garnish it with fried cashews, boiled eggs and golden raisins.
