Ingredients

For the dough
  • 250 g flour
  • 100 g Astra
  • salt
For deep frying
  • 100 g Astra
  • 250 ml oil
For the filling
  • 100 g carrots
  • 100 g potatoes
  • 50 g green peas
  • 50 g mushrooms
  • 20 g onions
  • A small amount of curry leaves
  • A small amount of lime
  • 1 tsp ginger
  • 1 tsp garlic
  • 2 tbsps Astra
  • salt (as required)
  • pepper (as required)

Instructions

  1. Knead flour, 100g Astra and salt together and make a non-stick dough. Keep it in a refrigerator for 10 minutes.
  2. Cut carrots and potatoes in to very small cubes. Cut the onion and mushrooms in to thin slices.
  3. Keep a pan on heat, add 2 tbsps Astra and then ginger, garlic, curry leaves and salt. Temper for a while. Then add all the vegetables and green peas. Cook under low heat.
  4. Take the flour mixture out of the refrigerator and roll it using a rolling pin. Make strips which are 8 inches long and 3 inches wide.
  5. Take a strip and put the prepared curry to a corner of it and fold the strip diagonally. Keep folding diagonally until the strip ends. Stick the last part of the strip by using a bit of water and applying pressure with hands.
  6. Take a pan and add 250ml oil. Add 100g Astra and heat. Once Astra is melted, fry the Samosa.
